There is something for everyone on Canada Day, including lots of great food! If you are heading out to a picnic or BBQ, I have the perfect treat recipe to share with you. These Maple Leaf Sandwich Cookies are the best snack to make and share to show off your national pride.

There is something I love about Canada Day! There are always so many fun family festivities to partake in. We look forward to the chance to celebrate our country and our heritage with the community. It wouldn’t be Canada Day without the cultural performances and displays, the parades and of course, the epic displays of fireworks!

This Maple Leaf Sandwich Cookies Recipe looks elegant, but truly, it comes together easily. The kids will love helping you make these tasty treats. You will need 2 different sized maple leaf cookie cutters, but I know you will make these cookies many times after trying them! So, it is a good investment in future baking.

Can I Use A Different Jam?

I used strawberry jam to fill my Canada Day Maple Leaf Cookies. My family thinks it is the perfect flavour for such a festive summer event. You can use whatever jam flavour you prefer. Raspberry, blackberry, and Peach jams are tasty options too.

Canada Day Maple Leaf Cookies Recipe

This Maple Leaf Sandwich Cookes recipe does require refrigeration before baking, but only about 30 minutes. So, you can make these in the morning and have them ready for dessert, or as a sweet to pass around during the much anticipated fireworks display as the night winds down. You might not be able to tell if the oohs and ahhs are for the pyrotechnics or the delicious cookies!

Maple Leaf Cookies Ingredients

  • 2 sticks, unsalted butter, cold and cut into 1/2 inch pieces
  • 1/2 cup white sugar
  • 1/2 tsp salt
  • 2 1/4 cup flour
  • 3/4 cup finely ground almonds
  • Raspberry or strawberry Jam
  • Confectioner’s sugar
  • 2 Maple Leaf cookie cutters, 1 small enough to fit comfortably in the centre of the larger cookie cutter.

How To Make Maple Leaf Sandwich Cookies

Step 1: Line cookie sheets with parchment paper. Preheat oven to 300 degrees.

Step 2: Using an electric mixer beat the butter, sugar and salt on low speed until the batter is almost smooth. In a second bowl combine the flour and almonds. Add the dry mixture to the wet mixture, scraping the sides of the bowl often until the dough is almost completely mixed. Don’t over mix.

Step 3: Roll the dough into a ball wrapping it in plastic wrap and putting it in the refrigerator for at least one hour. After the hour in the refrigerator, remove the dough and place on a lightly floured wood cutting board.

Step 4: Using your rolling pin, you may have to flour the rolling pin, roll out the dough in the same thickness. (if the dough becomes too soft (sticks to the cutting board or to the cookie cutter) rewrap it in plastic and put it back in the refrigerator for at least 20-30 minutes.

Step 5: Using the larger Maple Leaf cookie cutter, cut out all of the larger cookies. (If cookies become too sticky place cookie sheet with the cookies on it the refrigerator for 20-30 minutes).

Step 6: Return to the cookies already cut and cut the centre out of half of the previously cut cookies by using a smaller Maple Leaf cookie cutter. Using a metal spatula gently lift the cut cookie dough onto the parchment lined cookie sheets.

Step 7: Bake the cookies on the top rack of the oven at 300 degrees for 30 minutes or until an inserted toothpick comes out clean. Allow to cool on the cookie sheet for 10 minutes. Remove from cookie sheet and allow to cool completely.

Step 8: On the bottom half of the cookie (one without the hole in it) spread raspberry/strawberry jam on it, but not too close to the edges. On the top half of the cookie (the one with the hole in it) sprinkle confectionery sugar on it. (Do this away from the other half of the cookie). Taking the top part of the cookie holding it by it’s edges gently place it on top of the raspberry/strawberry jam cookie. (The jam will act as a “glue” to hold the two cookies together. )
